Salads for stomach ulcers: what can you eat, how to prepare?

General principles of food preparation

  1. Cook food only by steaming, boiling or stewing. Baking - maximum once a week. Fried foods are contraindicated.
  2. Dose the serving size: often a person eats quickly, chews food poorly and eventually overeats. Try to eat slowly, because the centers in the cerebral cortex that are responsible for satiation turn on only 15 minutes after the start of the meal.
  3. The diet for ulcer patients should be complete: caloric content in the range of 2100-2400 kcal, at least 80 g of fat, 130 g of protein and 250 g of carbohydrates per day.
  4. Eat small portions every 2-3 hours. Snacks should also be healthy, so no fast food or processed foods.
  5. Products must be fresh; carefully study expiration dates and storage conditions. It is better to put products with artificial flavors, colors, and taste enhancers aside.
  6. The food temperature should be comfortable: 45-55 degrees Celsius. Very cold and hot food irritates the gastric mucosa.
  7. During an exacerbation, food is carefully ground, soups and semi-liquid porridges are recommended. In the future, you can introduce new foods, but chew them thoroughly.
  8. Monitor your health and monitor your diet. If after some product your condition begins to worsen, exclude it from the menu.
  9. Don't forget about your drinking regime: drink up to 2.5 liters of liquid per day.

It is strictly forbidden to use vinegar or hot sauces. From the greens, you can add a little dill or parsley.

Healthy desserts

Most confectionery products (butter cookies and products that contain chocolate) are prohibited during periods of exacerbation of the disease. Therefore, the logical question arises, what can replace them?

They also use agar, a mixture of carbohydrates obtained from seafood in the form of a jelly. Recently, some manufacturers have begun to produce natural marshmallows and marshmallows, with a very limited shelf life. They can also be served in moderation with tea.

Recipes

Knowing which foods are allowed for consumption and which are prohibited, you can create a varied menu for the week.

As already mentioned, the nutrition of patients with peptic ulcers should be enjoyable and their appearance should evoke appetite. To do this, it is not at all necessary to use lengthy cooking methods and look for sophisticated recipes with unclear names. Often it is quite enough to simply subject the food to the usual heat treatment, boil, bake or stew, and then put it beautifully on a plate, after which you will want to quickly try the prepared dish. To achieve this result, you can use simple, but this does not make them any less popular and interesting recipes.

Rice casserole

In this case, when preparing a casserole, it is recommended to use a multicooker; in it, the food is evenly baked, cooked well, and the resulting dish retains all its taste and beneficial properties. To prepare, you need to take one glass of rice, eggs, milk, salt and sugar, steamed seedless raisins. Pre-boil the rice in milk, selecting the “Porridge” mode, then add the beaten yolks and everything else, put it on the “baking” mode for 20-25 minutes.

Mix everything and form small balls. It is best to cook them in a double boiler, but you can simply simmer them in a saucepan, adding half a glass of clean water to the bottom.

Chicken baked with apples

Sprinkle chicken fillet with salt and herbs. Peel 2-3 apples and cut them into slices. Wrap everything in foil and cook in the oven for 50 minutes.

Chicken meat is tender and lean, so it will not harm the mucous membrane. It consists of fibers that absorb acid that corrodes stomach tissue. Chicken meat can be boiled or baked. It will also make an excellent light version of cutlets - steamed or stewed meatballs. A combination of boiled vegetable salads will be harmonious with meat. To prepare a curd dessert, mix 1 pack (200 g) of cottage cheese with 1 egg and 1 tablespoon of sugar. Cupcake molds are used for baking. Bananas cut into slices are laid out on their bottom, and one and a half tablespoons of curd-egg mixture are placed on top. The forms are sent to a preheated oven for 15-20 minutes.

But many people find it difficult to completely give up sweets. There are several alternatives to the usual sweets that can be included in the diet menu.

Among them are the following recipes:

  • currant jelly. You will need 2 tbsp. l. fresh berries without peel, 1.5 tsp. sugar, 1.5 tbsp. l. gelatin. You need to squeeze the juice out of the berries and put it in the refrigerator. Gelatin should be poured into 2 tbsp. l. water, stir well and leave for 30 minutes. Pour water over the remaining berries and cook over low heat for 20 minutes, strain, add sugar and gelatin. Leave on the heat for another 15 minutes, stirring constantly. Pour in the berry juice, stir well, pour the mixture into molds and leave to harden. Can be consumed as a snack between main meals. You can make this jelly from any type of berries;
  • Sweet snowballs perfectly satisfy hunger and the desire to “eat something sweet.” To prepare them you need half a glass of flour, half a glass of milk, 3.5 tsp. sugar and 2 fresh eggs. Separate the whites and yolks, beat the whites with sugar until foamy. Boil the milk and leave on low heat. Gradually add the whipped mixture to it and stir. Use a slotted spoon to remove small lumps of the mixture (“snowballs”) and place them on a plate; you can eat them after the dish has cooled. Additionally, you can prepare cream for this sweet. Some of the remaining whites should be beaten with sugar and added to boiled milk, cooled. Pour the resulting mixture over the cooled snowballs;
  • berry mousse. To prepare, take half a glass of your favorite berries, 2 tbsp. l. sugar and the same amount of gelatin. Rub the berries through a sieve and place in a cool place. Add sugar to hot water, gradually add gelatin and stir constantly until completely dissolved. After this, add the berry mixture, stir everything and cool to 30 degrees. Beat the finished puree with a mixer until foam forms, pour into molds. You can eat the finished mousse straight from the dish or put it on a plate, first dipping the molds in hot water.
